Scrumptious banana bread.

So here it is. My first ever banana bread made from scratch ...from my brain. Yup...
no recipe to follow by. So I tried by trial and error, and used some things
I already knew, and came up with the most lovliest bread ever!
So here it is.
3 medium, overripe bananas
1 egg
1 tbls. honey(optional)
4 tbls. unsalted butter, softened (plus extra for
 greasing the pan)
1/2 c. sugar
2 c. flour
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
7 tbls. low fat canned milk( regular milk will also suffice)
1/4 tsp. cinnamon
1/4 tsp. clear vanilla extract
1/4 c. oil
Preheat the oven to 350. Grease a loaf pan or a medium sized cake pan. (which is what I used).
Mash the bananas until they're smooth. Lightly beat the egg and add to the bananas
mixture. Beat the butter, and sugar in a bowl till pale
and fluffy/creamy. Add to banana mixture.
Sift all of dry ingredients and add to the banana mixture.
DO NOT STIR AT ALL!!!
If you stir,  you will have a nasty, lumpy, super thick biscuit dough!!
Add the milk and oil , and beat vigorously till you have a
silky muffin batter. Your batter must be somewhat thick but smooth.
Pour you batter into your pan, and bake for 25 min.
When your loaf is done, let cool completely
before removing it from the pan . Then cut your self a glorious slice
and top with whatever you choose or with a teaspoon of
whipped cream cheese as shown above.

Let me know how yours comes out. I'd love to hear about it!

With love,
Lenisha
